Chef's tarte tatin, with thin slices of apple

Chef’s Tarte Tatin Recipe

Ingredients:

  • 1 sheet of puff pastry
  • 5-6 medium-sized apples, peeled, cored and sliced thinly
  • 1/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Melt the butter in a large oven-safe skillet over medium heat.
  3. Add the sugar and stir well until fully dissolved. Cook for 3-4 minutes, stirring occasionally, until the mixture turns a golden caramel color.
  4. Add the apples, vanilla extract and salt to the skillet and cook for 5-7 minutes, stirring occasionally, until the apples are slightly softened and coated with the caramel sauce.
  5. Roll out the puff pastry sheet to a thickness of about 1/4 inch (0.5 cm) and cut out a circle that is slightly larger than the skillet.
  6. Place the pastry circle on top of the caramelized apples, tucking the edges around the apples to create a tidy rim.
  7. Bake the tarte tatin for 20-25 minutes, or until the pastry is golden brown and puffed up.
  8. Remove the skillet from the oven and let it cool for 5-10 minutes.
  9. To serve, place a large plate on top of the skillet and carefully flip the skillet over so that the tarte tatin releases onto the plate, with the apples facing up.
