Cherry Cheesecake Recipe
Ingredients:
- 1 1/2 cups Graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted and cooled
- 24 oz cream cheese, at room temperature
- 1 1/3 cups granulated sugar
- 1/4 tsp salt
- 2 tsp vanilla extract
- 4 large eggs, at room temperature
- 1 cup sour cream, at room temperature
- 2 cans of cherries in syrup
Instructions:
- Preheat oven to 325°F.
- Grease a 9-inch springform pan and wrap the outside with foil to prevent any leakage.
- In a bowl, mix the Graham cracker crumbs, 1/3 cup granulated sugar and melted butter. Press the mixture into the bottom of the prepared pan using the back of a spoon. Set aside.
- In a large mixing bowl, beat the cream cheese, 1 1/3 cups granulated sugar, salt and vanilla extract until smooth.
- Beat in the eggs one at a time, making sure each has incorporated before adding the next.
- Stir in the sour cream and mix well.
- Drain the cherries but keep the syrup. Set aside.
- Pour the cheesecake mixture into prepared crust and smooth out the mixture with a spatula.
- Drizzle half a cup of reserved cherry syrup randomly over the top of the cheesecake and bake for 50-60 minutes or until the edges are set and the center jiggles slightly.
- Take the cheesecake out of the oven and let it cool for 5 minutes before running a knife around the edges to release any stuck cheesecake.
- Cool cheesecake to room temperature before chilling it in the refrigerator for at least 4 hours or overnight.
- Once the cheesecake is chilled, remove it from the refrigerator and let it sit for 5 minutes before releasing the springform pan from the cheesecake.
- Topped the cheesecake with the canned cherries.
- Serve and enjoy!
