Cherry Cheesecake Recipe

Ingredients:

  • 1 1/2 cups Graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 24 oz cream cheese, at room temperature
  • 1 1/3 cups granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 4 large eggs, at room temperature
  • 1 cup sour cream, at room temperature
  • 2 cans of cherries in syrup

Instructions:

  1. Preheat oven to 325°F.
  2. Grease a 9-inch springform pan and wrap the outside with foil to prevent any leakage.
  3. In a bowl, mix the Graham cracker crumbs, 1/3 cup granulated sugar and melted butter. Press the mixture into the bottom of the prepared pan using the back of a spoon. Set aside.
  4. In a large mixing bowl, beat the cream cheese, 1 1/3 cups granulated sugar, salt and vanilla extract until smooth.
  5. Beat in the eggs one at a time, making sure each has incorporated before adding the next.
  6. Stir in the sour cream and mix well.
  7. Drain the cherries but keep the syrup. Set aside.
  8. Pour the cheesecake mixture into prepared crust and smooth out the mixture with a spatula.
  9. Drizzle half a cup of reserved cherry syrup randomly over the top of the cheesecake and bake for 50-60 minutes or until the edges are set and the center jiggles slightly.
  10. Take the cheesecake out of the oven and let it cool for 5 minutes before running a knife around the edges to release any stuck cheesecake.
  11. Cool cheesecake to room temperature before chilling it in the refrigerator for at least 4 hours or overnight.
  12. Once the cheesecake is chilled, remove it from the refrigerator and let it sit for 5 minutes before releasing the springform pan from the cheesecake.
  13. Topped the cheesecake with the canned cherries.
  14. Serve and enjoy!
