Chestnut Velouté Recipe
Ingredients:
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons unsalted butter
- 1/2 onion, chopped
- 1 pound chestnuts, roasted and peeled
- 2 garlic cloves, minced
- 1/4 teaspoon nutmeg
Instructions:

- Return the puree to the pot and add heavy cream. Heat over medium heat until warmed through and serve immediately.
