Chestnut Velouté Recipe

Ingredients:

  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1/2 onion, chopped
  • 1 pound chestnuts, roasted and peeled
  • 2 garlic cloves, minced
  • 1/4 teaspoon nutmeg

Instructions:

  1. In a large pot, melt the butter over medium heat. Add onion and garlic and cook until onion is tender, about 5 minutes.
  2. Add chestnuts, nutmeg, salt, pepper, and broth to the pot. Bring to a boil and then reduce heat to low and let simmer until the chestnuts are tender, about 20 minutes.
  3. When the chestnuts are cooked, let cool for a few minutes and then puree in a blender or food processor until smooth.
  4. Return the puree to the pot and add heavy cream. Heat over medium heat until warmed through and serve immediately.
