Chicken Terrine Recipe
Ingredients:
- 1 lb. ground chicken
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 2 garlic cloves, minced
- 1 egg
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 6 slices cooked bacon
- 1/2 cup mayonnaise
- 2 tbsp. Dijon mustard
- 1 tbsp. honey
Instructions:
- Preheat the oven to 350 degrees F.
- In a large bowl, mix together the ground chicken, bread crumbs, milk, parsley, onion, garlic, egg, salt, and pepper until well combined.
- Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides.
- Layer half of the chicken mixture into the bottom of the prepared pan.
- Layer the bacon slices over the chicken mixture.
- In a small bowl, mix together the mayonnaise, Dijon mustard, and honey. Spread half of this mixture over the bacon slices.
- Layer the remaining chicken mixture over the sauce, pressing it down gently.
- Spoon the remaining sauce over the chicken mixture, spreading it evenly.
- Bake for 50-60 minutes, or until the top is golden brown and a meat thermometer inserted in the center registers 165 degrees F.
- Remove from the oven and let cool to room temperature before slicing and serving.
