Chicken Terrine Recipe

Ingredients:

  • 1 lb. ground chicken
  • 1/2 cup bread crumbs
  • 1/4 cup milk
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 garlic cloves, minced
  • 1 egg
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 6 slices cooked bacon
  • 1/2 cup mayonnaise
  • 2 tbsp. Dijon mustard
  • 1 tbsp. honey

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, mix together the ground chicken, bread crumbs, milk, parsley, onion, garlic, egg, salt, and pepper until well combined.
  3. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides.
  4. Layer half of the chicken mixture into the bottom of the prepared pan.
  5. Layer the bacon slices over the chicken mixture.
  6. In a small bowl, mix together the mayonnaise, Dijon mustard, and honey. Spread half of this mixture over the bacon slices.
  7. Layer the remaining chicken mixture over the sauce, pressing it down gently.
  8. Spoon the remaining sauce over the chicken mixture, spreading it evenly.
  9. Bake for 50-60 minutes, or until the top is golden brown and a meat thermometer inserted in the center registers 165 degrees F.
  10. Remove from the oven and let cool to room temperature before slicing and serving.
