Chicken-Tomato Spring Rolls

Ingredients

  • 1 cup cooked shredded chicken
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 spring roll wrappers
  • 1 egg, beaten

Instructions

  1. In a mixing bowl, combine the shredded chicken, diced tomatoes, cilantro, cumin, salt, and pepper.
  2. Arrange the spring roll wrappers on your work surface and spoon about 2 tablespoons of the chicken filling onto the center of each wrapper.
  3. Roll them tightly, brushing the edges with egg to seal. Repeat until all the spring roll wrappers are filled and rolled.
  4. Heat a non-stick pan or wok over medium-high heat. Add some oil to the pan, and then add the spring rolls. Cook the spring rolls, turning occasionally, until they are golden brown and crisp, for approximately 5 minutes.
  5. Remove the spring rolls from the pan and place them on a paper towel-lined plate to drain excess oil. Serve them hot with your favorite dipping sauce.
