Chicken-Tomato Spring Rolls
Ingredients
- 1 cup cooked shredded chicken
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 8 spring roll wrappers
- 1 egg, beaten
Instructions
- In a mixing bowl, combine the shredded chicken, diced tomatoes, cilantro, cumin, salt, and pepper.
- Arrange the spring roll wrappers on your work surface and spoon about 2 tablespoons of the chicken filling onto the center of each wrapper.
- Roll them tightly, brushing the edges with egg to seal. Repeat until all the spring roll wrappers are filled and rolled.
- Heat a non-stick pan or wok over medium-high heat. Add some oil to the pan, and then add the spring rolls. Cook the spring rolls, turning occasionally, until they are golden brown and crisp, for approximately 5 minutes.
- Remove the spring rolls from the pan and place them on a paper towel-lined plate to drain excess oil. Serve them hot with your favorite dipping sauce.
