Chicken with Rice Recipe

Ingredients:

  • 1 cup of long-grain rice
  • 2 cups of chicken broth
  • 4 chicken breasts, boneless and skinless
  • 1/4 cup of olive oil
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/4 teaspoon of paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Rinse the rice in a fine mesh strainer and set aside.
  3. In a large bowl, whisk together the chicken broth, garlic powder, onion powder, paprika, olive oil, salt, and pepper.
  4. Place the rice on the bottom of a 9×13 inch baking dish.
  5. Place the chicken breasts on top of the rice and pour the broth mixture over them.
  6. Cover the dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 20-30 minutes or until the chicken is cooked through and the rice is tender.
  8. Remove from the oven and let it cool for a few minutes before serving.
