Chocolate and Almond Cookies Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chopped almonds

Instructions:

  1. Preheat the oven to 350°F (176°C).
  2. In a medium bowl, combine flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the egg and vanilla extract. Mix until well combined.
  5. Gradually add in the flour mixture and cocoa powder. Continue to mix until well combined.
  6. Add in the chopped almonds and mix until evenly distributed.
  7. Using a cookie scoop or tablespoon, scoop out dough and roll into 1 1/2 inch balls. Place on a baking sheet lined with parchment paper, leaving about 2 inches in between each cookie.
  8. Bake for 10-12 minutes or until the edges of the cookies are set. The center will still be slightly soft but will continue to cook as it cools.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before removing them to a wire rack to cool completely.
