Chocolate & Berries Log Recipe
Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted and cooled slightly
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 cup fresh mixed berries (such as raspberries, strawberries, and blueberries)
Instructions
- Preheat oven to 350°F. Line a 10×15-inch jelly roll pan with parchment paper and set aside.
- In a medium bowl, sift together flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, beat eggs and granulated sugar together until thick and fluffy, about 5 minutes.
- Add vanilla extract and mix until combined.
- Gently fold in flour mixture until just combined.
- Stir in melted butter until just combined.
- Pour batter into prepared pan and smooth out the top.
- Bake for 12-15 minutes, or until cake is set and springs back when lightly touched.
- Remove cake from oven and let cool in the pan for 5 minutes.
- Place a clean kitchen towel on top of the cake and carefully flip the pan over, so the cake is now on the towel.
- Carefully peel off the parchment paper and let cool completely on the towel.
- In a large bowl, whip heavy cream and powdered sugar together until stiff peaks form.
- Spread whipped cream over the cooled cake, leaving a 1-inch border around the edges.
- Scatter mixed berries on top of the whipped cream.
- Starting at the short end closest to you, carefully roll up cake (using the towel to help roll) into a log shape.
- Transfer chocolate & berries log to a serving platter and chill in the refrigerator for at least 1 hour before serving.
