Chocolate & Berries Log Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup fresh mixed berries (such as raspberries, strawberries, and blueberries)

Instructions

  1. Preheat oven to 350°F. Line a 10×15-inch jelly roll pan with parchment paper and set aside.
  2. In a medium bowl, sift together flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, beat eggs and granulated sugar together until thick and fluffy, about 5 minutes.
  4. Add vanilla extract and mix until combined.
  5. Gently fold in flour mixture until just combined.
  6. Stir in melted butter until just combined.
  7. Pour batter into prepared pan and smooth out the top.
  8. Bake for 12-15 minutes, or until cake is set and springs back when lightly touched.
  9. Remove cake from oven and let cool in the pan for 5 minutes.
  10. Place a clean kitchen towel on top of the cake and carefully flip the pan over, so the cake is now on the towel.
  11. Carefully peel off the parchment paper and let cool completely on the towel.
  12. In a large bowl, whip heavy cream and powdered sugar together until stiff peaks form.
  13. Spread whipped cream over the cooled cake, leaving a 1-inch border around the edges.
  14. Scatter mixed berries on top of the whipped cream.
  15. Starting at the short end closest to you, carefully roll up cake (using the towel to help roll) into a log shape.
  16. Transfer chocolate & berries log to a serving platter and chill in the refrigerator for at least 1 hour before serving.
