Chocolate-Caramel Eclairs

Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 3 tablespoons unsalted butter
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1/2 cup semisweet chocolate chips

Instructions:

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a medium-sized saucepan, add water, butter, and salt and bring to a boil over medium-high heat.
  3. Reduce the heat to low, add in the flour all at once, and stir with a wooden spoon until the mixture comes together and forms a ball of dough that pulls away from the sides of the pan. Remove it from the heat and let cool for 5 minutes.
  4. Add eggs one at a time, stirring well after each addition, until the dough is smooth and shiny.
  5. Using a large pastry bag fitted with a large round tip, pipe 12-14 eclairs, about 5 inches long and 1 1/2 inch wide, onto the prepared baking sheet.
  6. Bake for 25-30 minutes or until golden brown. Remove from the oven and let cool completely.
  7. In a medium-sized saucepan, heat the heavy cream, sugar, butter, water and salt over medium-high heat. Stirring often until the mixture thickens and turns a golden brown color (about 10-12 minutes).
  8. Remove from the heat and let cool to room temperature.
  9. Melt the chocolate chips in the microwave for 30-second intervals, stirring often until smooth.
  10. Fill each eclair with caramel and dip them into melted chocolate, let cool and serve.
