Chocolate-Coffee Madeleines

Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 2/3 cup granulated sugar
  • 2 tablespoons cocoa powder
  • 1 tablespoon instant coffee granules
  • 1/2 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly spray madeleine molds with cooking spray, and dust with flour.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate large mixing bowl, whisk together melted butter, eggs, granulated sugar, cocoa powder, and instant coffee granules until smooth.
  4. Add the dry ingredients to the wet ingredients, and whisk until batter is smooth.
  5. Refrigerate the batter for at least 30 minutes.
  6. Fill each madeleine mold with 1 heaping tablespoon of batter.
  7. Bake for 10-12 minutes, or until madeleines are puffed and spring back when touched.
  8. Cool in the molds for 5 minutes before removing, and transfer to a wire rack to cool completely.
  9. Dust madeleines with powdered sugar before serving.
