Ingredients

  • 3 large eggs
  • 2/3 cup granulated sugar
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/3 cup heavy cream
  • 2/3 cup dark chocolate chips
  • 1 tsp pure vanilla extract
  • 2 tbsp honey
  • 1/2 tsp orange zest

Instructions

  1. Preheat the oven to 375°F (190 °C).
  2. Using a brush, generously butter madeleine molds and dust them with flour. Shake off the excess flour.
  3. In a mixing bowl, beat the eggs and sugar together until thick and pale. This will take about 5 minutes.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Stir the melted butter and vanilla extract into the egg mixture until well blended.
  6. Gradually add the flour mixture to the egg mixture and mix until well combined.
  7. Spoon the batter into the prepared molds, filling each mold about 3/4 of the way.
  8. Bake the madeleines for 12-15 minutes or until they are golden brown and a toothpick inserted in the center comes out clean.
  9. Remove the madeleines from the oven and let them cool in the molds for a few minutes. Gently remove them from the molds and place them on a wire rack to cool completely.
  10. While the madeleines are cooling, make the chocolate cream. In a small saucepan, heat the cream until it begins to simmer. Remove from heat and add the chocolate chips. Stir until the chocolate is melted and the mixture is smooth. Allow it to cool for a few minutes.
  11. Add the honey and orange zest to the chocolate mixture and stir until well combined.
  12. Serve the madeleines with the chocolate cream on the side or drizzled over the top. Garnish with fresh orange zest if desired.
