Chocolate Hazelnut Truffles Recipe

Ingredients:

  • 1/2 cup hazelnuts
  • 10 ounces semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • Cocoa powder for dusting

Instructions:

  1. Preheat oven to 350°F. Spread the hazelnuts on a baking sheet and toast in the oven until fragrant, about 12-15 minutes. Remove from oven and let them cool. Rub the hazelnuts inside a kitchen towel to remove the skins.
  2. Finely chop hazelnuts and set aside.
  3. Place the chocolate chips in a medium heatproof bowl and set aside.
  4. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and pour over the chocolate chips. Add vanilla extract and let sit for 1 minute.
  5. Whisk the chocolate mixture until smooth and shiny. Add chopped hazelnuts and stir to combine.
  6. Cover the mixture and chill in the refrigerator for 2-3 hours, or until firm enough to roll.
  7. Using a small scoop, portion chocolate mixture into balls and roll them into smooth truffles. Place them onto a baking sheet lined with parchment paper.
  8. Chill chocolate hazelnut truffles in the refrigerator for 30 minutes to firm up.
  9. To serve, place cocoa powder in a shallow bowl. Roll each truffle in the cocoa powder to coat.
