Chocolate Layer Cake: Gourmet Recipe

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the frosting:
    • 1 cup unsalted butter, softened
    • 3-4 cups powdered sugar
    • 1/2 cup unsweetened cocoa powder
    • 1/2 cup heavy cream
    • 2 teaspoons vanilla extract
    • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F. Grease and flour two 9-inch cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda and salt until well combined.
  3. Add buttermilk, vegetable oil, eggs and vanilla extract, and beat on low speed until smooth and creamy.
  4. Add boiling water to the mixture and stir until well combined.
  5. Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. Remove from oven and let the cakes cool in their pans for 10 minutes before removing them from the pans and transferring them to a wire rack to cool completely.
  7. In the meantime, prepare the frosting: Beat butter on medium speed until creamy and smooth.
  8. Add powdered sugar, cocoa powder, heavy cream, vanilla extract and salt, and beat on low speed until combined.
  9. Once the frosting ingredients are combined, increase the speed to high and beat until light and fluffy.
  10. Place one of the cooled cakes on a cake stand and spread about 1/3 of the frosting on top of it.
  11. Place the second cooled cake on top of the frosting layer and spread the remaining frosting over the entire cake.
