Chocolate Meringue Pie Recipe
Ingredients:
- 1 9-inch pie crust, pre-baked
- 1 cup sugar
- 1/3 cup cornstarch
- 1/4 tsp salt
- 2 cups milk
- 4 egg yolks, lightly beaten
- 1 tbsp butter
- 1 tsp vanilla extract
- 4 oz semisweet chocolate, chopped
- 4 egg whites
- 1/4 tsp cream of tartar
- 1/4 cup sugar
Instructions:
- In a medium saucepan, combine 1 cup sugar, cornstarch, and salt. Gradually stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly.
- Reduce heat and cook and stir for 2 more minutes. Remove from heat and stir a small amount of hot mixture into beaten egg yolks. Pour egg mixture back into the saucepan and bring to a gentle boil.
- Cook and stir for 2 more minutes. Remove from heat and stir in butter, vanilla, and chocolate until melted and smooth.
- Pour chocolate mixture into pre-baked pie crust.
- Preheat oven to 375°F (190°C).
- In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form.
- Gradually beat in 1/4 cup sugar, 1 tablespoon at a time, beating on high speed until stiff glossy peaks form and sugar is dissolved.
- Spread meringue over hot filling, sealing to edge of crust to prevent shrinking or weeping.
- Bake for 10-12 minutes or until meringue is golden.
- Cool on wire rack for 1 hour. Chill for at least 3 hours before serving.
