Chocolate Meringue Pie Recipe

Ingredients:

  • 1 9-inch pie crust, pre-baked
  • 1 cup sugar
  • 1/3 cup cornstarch
  • 1/4 tsp salt
  • 2 cups milk
  • 4 egg yolks, lightly beaten
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • 4 oz semisweet chocolate, chopped
  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 1/4 cup sugar

Instructions:

  1. In a medium saucepan, combine 1 cup sugar, cornstarch, and salt. Gradually stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly.
  2. Reduce heat and cook and stir for 2 more minutes. Remove from heat and stir a small amount of hot mixture into beaten egg yolks. Pour egg mixture back into the saucepan and bring to a gentle boil.
  3. Cook and stir for 2 more minutes. Remove from heat and stir in butter, vanilla, and chocolate until melted and smooth.
  4. Pour chocolate mixture into pre-baked pie crust.
  5. Preheat oven to 375°F (190°C).
  6. In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form.
  7. Gradually beat in 1/4 cup sugar, 1 tablespoon at a time, beating on high speed until stiff glossy peaks form and sugar is dissolved.
  8. Spread meringue over hot filling, sealing to edge of crust to prevent shrinking or weeping.
  9. Bake for 10-12 minutes or until meringue is golden.
  10. Cool on wire rack for 1 hour. Chill for at least 3 hours before serving.
