Chocolate Mousse Cake Recipe

Ingredients

  • 10.5 oz of dark chocolate, chopped
  • 7 tbsp of unsalted butter
  • 4 eggs, separated into yolks and whites
  • 2/3 cup of granulated sugar
  • 1 cup of heavy cream
  • 1/4 tsp of salt
  • 1 tsp of vanilla extract
  • 1/4 cup of powdered sugar
  • 1 chocolate cake, 9-inch round

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan and set it aside.
  2. Melt the chocolate and butter in a double boiler or microwave, stirring occasionally until smooth. Remove it from heat and let it cool down for about 10 minutes.
  3. Add the egg yolks, one at a time, into the chocolate mixture. Keep stirring until all the yolks are mixed properly.
  4. In a separate bowl, beat the egg whites and salt until they form stiff peaks.
  5. Add the sugar into the egg whites mixture and beat until the mixture becomes glossy.
  6. Spoon about 1/3 of the egg white mixture into the chocolate mixture and fold them gently with a spatula. Add the remaining egg whites mixture and fold it until both mixtures are evenly combined.
  7. Pour the chocolate mousse into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 25-30 minutes or until a toothpick inserted into the cake comes out clean. Let it cool down completely.
  9. Remove the cooled cake from the pan and transfer it to a serving plate.
  10. In a medium bowl, whip the heavy cream, vanilla extract, and powdered sugar until stiff peaks form. Spread it evenly over the cooled cake.
  11. Serve the chocolate mousse cake chilled. You can also garnish it with chocolate shavings or fresh berries if desired.
