Chocolate Soufflés Recipe

Ingredients:

  • 1/4 cup unsalted butter, plus more for the ramekins
  • 1/2 cup granulated sugar, plus more for the ramekins
  • 6 ounces bittersweet chocolate, finely chopped
  • 6 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • Confectioners’ sugar, for dusting

Instructions:

  1. Preheat the oven to 375°F. Grease six 8-ounce ramekins with butter and sprinkle sugar to coat the bottom and sides of each ramekin.
  2. Add the butter and chocolate to a heatproof bowl set over a pot of simmering water. Stir until the chocolate and butter are melted and smooth. Remove the bowl from the heat and let it cool slightly.
  3. Beat the egg yolks and 1/4 cup sugar in a large bowl until the mixture is thick and pale in color.
  4. Stir in the chocolate mixture until well combined.
  5. Beat the egg whites, cream of tartar, and salt in a separate bowl until soft peaks form.
  6. Gradually add the remaining 1/4 cup sugar and beat until stiff peaks form.
  7. Gently fold the egg whites into the chocolate mixture in three additions.
  8. Divide the mixture evenly among the prepared ramekins.
  9. Bake for 15-18 minutes or until the soufflés have risen and the tops are set.
  10. Dust the soufflés with confectioners’ sugar and serve immediately.
