Chocolate Tart with Espelette Pepper Recipe

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1 egg yolk
  • 2 tbsp cold water
  • 8 oz. bittersweet chocolate, chopped
  • 1/2 cup heavy cream
  • 1 tsp Espelette pepper (or substitute cayenne pepper or paprika)

Instructions

  1. In a food processor, combine the flour, cocoa powder, sugar, and salt. Add the chilled butter and pulse until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the egg yolk and cold water. Add to the flour mixture and pulse until the dough comes together.
  3. Gather the dough into a ball, flatten into a disk shape, and wrap with plastic wrap. Refrigerate for at least 30 minutes.
  4. Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough to fit a 9-inch (23cm) tart pan with removable bottom. Trim the excess dough and prick the bottom of the crust with a fork.
  5. Bake for 15-20 minutes or until the crust is set. Remove from the oven and let cool.
  6. Meanwhile, prepare the filling. In a heatproof bowl set over a pot of simmering water, melt the chocolate. Remove from the heat and stir in the heavy cream and Espelette pepper. Mix until smooth.
  7. Pour the chocolate mixture into the cooled tart shell. Smooth the top with a spatula and refrigerate for at least 1 hour or until set.
  8. Serve chilled with whipped cream and a sprinkle of Espelette pepper, if desired.
