Chorizo-Saffron Crème Brûlée Recipe

Ingredients

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 teaspoon saffron threads
  • 1 tablespoon chopped chorizo
  • 2 tablespoons brown sugar

Instructions

  1. Preheat the oven to 325 degrees F.
  2. In a saucepan, combine the heavy cream and whole milk. Bring to a simmer over medium heat.
  3. Meanwhile, in a mixing bowl, beat the egg yolks until light and frothy. Gradually whisk in the granulated sugar until smooth.
  4. Remove the cream and milk mixture from heat and let cool for a couple of minutes. Then whisk in the saffron threads and chopped chorizo until well combined.
  5. Add the saffron-chorizo mixture to the egg mixture. Whisk until smooth.
  6. Divide the custard mixture among 4 ramekins. Place the ramekins in a baking dish. Pour boiling water into the dish to come halfway up the sides of the ramekins.
  7. Bake the crème brûlée for 30 to 35 minutes, or until just set. Remove from oven and let cool to room temperature. Then refrigerate for at least 2 hours or up to 1 day.
  8. When ready to serve, sprinkle 1 tablespoon of brown sugar over each custard. Use a kitchen torch to melt and caramelize the sugar. (Alternatively, place the ramekins under a broiler for a couple of minutes until the sugar is melted and caramelized.)
  9. Let the crème brûlée cool for a few minutes before serving.
