Christmas Cheesecake
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 32 oz cream cheese, softened
- 1 1/2 cups granulated sugar
- 1/4 cup cornstarch
- 4 large eggs
- 1 cup heavy cream
- 1 tbsp vanilla extract
- 1/4 tsp salt
- 1 cup cranberry sauce
- 1/4 cup water
Instructions:
- Preheat oven to 350°F.
- In a mixing bowl, stir together graham cracker crumbs and sugar. Add melted butter and mix until combined.
- Press mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove from oven and let cool.
- In a large mixing bowl, beat cream cheese until smooth and creamy. Add sugar and cornstarch and beat until well combined.
- Add eggs one at a time, beating after each addition.
- Stir in heavy cream, vanilla extract, and salt until well mixed.
- Spread cheesecake filling over crust and bake for 1 hour and 15 minutes or until set.
- Remove from oven and let cool for 30 minutes. Cover and chill in the fridge for at least 6 hours or overnight.
- In a small saucepan, heat cranberry sauce and water over medium heat until smooth.
- Remove from heat and let cool.
- Drizzle cranberry sauce over cheesecake. Slice and serve.
