Christmas Cheesecake

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 32 oz cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1/4 cup cornstarch
  • 4 large eggs
  • 1 cup heavy cream
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 1 cup cranberry sauce
  • 1/4 cup water

Instructions:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, stir together graham cracker crumbs and sugar. Add melted butter and mix until combined.
  3. Press mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove from oven and let cool.
  4. In a large mixing bowl, beat cream cheese until smooth and creamy. Add sugar and cornstarch and beat until well combined.
  5. Add eggs one at a time, beating after each addition.
  6. Stir in heavy cream, vanilla extract, and salt until well mixed.
  7. Spread cheesecake filling over crust and bake for 1 hour and 15 minutes or until set.
  8. Remove from oven and let cool for 30 minutes. Cover and chill in the fridge for at least 6 hours or overnight.
  9. In a small saucepan, heat cranberry sauce and water over medium heat until smooth.
  10. Remove from heat and let cool.
  11. Drizzle cranberry sauce over cheesecake. Slice and serve.
