  • 4 eggs

Directions:

  1. In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium-high heat.
  2. Add flour to the saucepan and stir vigorously until a thick dough forms, about 2-3 minutes.
  3. Take the saucepan off the heat and let the dough cool for 2-3 minutes. Add eggs one at a time, stirring well after each addition until the dough is smooth and glossy.
  4. In a shallow dish, mix sugar and cinnamon together and set aside.
  5. In a large frying pan or pot, heat vegetable oil over medium-high heat. Scoop dough into a piping bag fitted with a large star nozzle. Pipe long strips of dough directly into the hot oil, cut them with scissors and fry, turning occasionally, until they are golden brown and crispy, about 2-3 minutes per batch. Remove churros from the oil with a slotted spoon and drain them on a paper towel-lined plate for a minute.
  6. While the churros are still warm, roll them in the sugar and cinnamon mixture until coated.
