Clafoutis from Limousin
A classic French dessert made with fresh fruit and a custard-like batter.
Ingredients:
- 1 cup milk
- 3/4 cup all-purpose flour
- 1/2 cup granulated sugar
- 3 eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 cups pitted cherries or other fresh fruits
- 2 tbsp unsalted butter
- powdered sugar for dusting
Instructions:
- Preheat the oven to 375°F. Butter a 9-inch pie dish or other round baking dish.
- In a blender or food processor, combine the milk, flour, sugar, eggs, vanilla, and salt. Blend until smooth.
- Scatter the cherries or other fruits in the bottom of the prepared dish. Pour the batter over the top.
- Dot the top with butter.
- Bake for 35 to 45 minutes, until the clafoutis is golden brown and set. A knife inserted in the center should come out clean.
- Let the clafoutis cool for a few minutes on a wire rack. Dust with powdered sugar and serve warm or at room temperature.
