Classic Chocolate Profiteroles
Ingredients:
- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
Directions:
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Combine water, butter, and salt in a medium saucepan over medium heat. Cook until the butter is melted and the mixture is simmering.
- Add the flour and stir until the mixture comes together into a ball.
- Remove from heat and let the mixture cool for a minute or two.
- Add eggs one at a time, stirring well after each addition. The mixture will become smooth and shiny.

- Once the profiteroles are cool, cut a small hole in the side of each one with a serrated knife. Fill each hole with whipped cream.
- Melt the chocolate chips in a double boiler or in the microwave in 30-second intervals, stirring between each interval.
- Dip the filled profiteroles in the melted chocolate and place them on a wire rack to cool and set.
