Classic Chocolate Profiteroles

Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips

Directions:

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Combine water, butter, and salt in a medium saucepan over medium heat. Cook until the butter is melted and the mixture is simmering.
  3. Add the flour and stir until the mixture comes together into a ball.
  4. Remove from heat and let the mixture cool for a minute or two.
  5. Add eggs one at a time, stirring well after each addition. The mixture will become smooth and shiny.
  6. Spoon the dough onto the prepared baking sheet in tablespoon-sized pieces, leaving about 1 1/2 inches between each spoonful.
  7. Bake for 20-25 minutes or until the profiteroles are puffed up and golden brown.
  8. Let cool completely on the baking sheet.
  9. While the profiteroles cool, make the filling. Whip the heavy cream and vanilla extract with an electric mixer until stiff peaks form.
  10. Once the profiteroles are cool, cut a small hole in the side of each one with a serrated knife. Fill each hole with whipped cream.
  11. Melt the chocolate chips in a double boiler or in the microwave in 30-second intervals, stirring between each interval.
  12. Dip the filled profiteroles in the melted chocolate and place them on a wire rack to cool and set.
