Classic Jelly Roll Cake Recipe

Ingredients

  • 4 large eggs
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Confectioners’ sugar for dusting
  • Jelly or jam for filling

Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 10×15 inch jelly roll pan.
  2. In a large mixing bowl, beat eggs and sugar together until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. In a separate bowl, sift together flour, baking powder, and salt.
  5. Gradually add the flour mixture to the egg mixture and mix well.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 12-15 minutes or until golden brown and the top springs back when lightly touched.
  8. Remove the cake from the oven and immediately loosen the edges of the cake from the pan with a knife.
  9. Dust a clean kitchen towel with confectioners’ sugar and invert the cake onto it.
  10. Carefully roll the cake and the towel together, starting from the short end of the cake. Allow the cake to cool completely while still rolled up.
  11. When the cake is completely cool, carefully unroll it and spread your favorite jelly or jam on top of the cake.
  12. Roll the cake back up and trim the ends if desired.
  13. Dust the top of the cake with confectioners’ sugar before serving.”
