Classic Jelly Roll Cake Recipe
Ingredients
- 4 large eggs
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Confectioners’ sugar for dusting
- Jelly or jam for filling
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a 10×15 inch jelly roll pan.
- In a large mixing bowl, beat eggs and sugar together until light and fluffy.
- Add the vanilla extract and mix well.
- In a separate bowl, sift together flour, baking powder, and salt.
- Gradually add the flour mixture to the egg mixture and mix well.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 12-15 minutes or until golden brown and the top springs back when lightly touched.
- Remove the cake from the oven and immediately loosen the edges of the cake from the pan with a knife.
- Dust a clean kitchen towel with confectioners’ sugar and invert the cake onto it.
- Carefully roll the cake and the towel together, starting from the short end of the cake. Allow the cake to cool completely while still rolled up.
- When the cake is completely cool, carefully unroll it and spread your favorite jelly or jam on top of the cake.
- Roll the cake back up and trim the ends if desired.
- Dust the top of the cake with confectioners’ sugar before serving.”
