Classic Tropézienne Tart Recipe
Ingredients:
- 1 pound of brioche dough
- 1/2 cup of sugar
- 1 tablespoon of cornstarch
- 1 tablespoon of flour
- 4 egg yolks
- 1 cup of milk
- 1 teaspoon of vanilla extract
- 1/2 cup of whipped cream
- 1/4 cup of sliced almonds
Instructions:
- Preheat oven to 375°F (190°C).
- Roll out the brioche dough on a floured surface to a thickness of about 1/2 inch.
- Cut out a circle of dough, about 9 inches in diameter. Place it on a buttered baking sheet and let it rise for 30 minutes.
- Bake for 20-25 minutes until golden brown on top. Remove from oven and let cool completely.
- Meanwhile, in a saucepan, combine the sugar, cornstarch, flour, egg yolks, milk, and vanilla extract.
- Cook the mixture over medium heat, stirring constantly, until it thickens.
- Remove from heat, pour it into a bowl, cover with plastic wrap, and refrigerate until cool.
- Once the brioche circle has cooled, cut it in half horizontally.
- Spread the cooled cream mixture on the bottom half of the brioche.
- Top with the whipped cream and then the other half of the brioche, pressing down gently.
- Sprinkle the sliced almonds on top and chill for an hour before serving.
