Tropézienne Tart

Ingredients:

  • 1 pound of brioche dough
  • 1/2 cup of sugar
  • 1 tablespoon of cornstarch
  • 1 tablespoon of flour
  • 4 egg yolks
  • 1 cup of milk
  • 1 teaspoon of vanilla extract
  • 1/2 cup of whipped cream
  • 1/4 cup of sliced almonds

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Roll out the brioche dough on a floured surface to a thickness of about 1/2 inch.
  3. Cut out a circle of dough, about 9 inches in diameter. Place it on a buttered baking sheet and let it rise for 30 minutes.
  4. Bake for 20-25 minutes until golden brown on top. Remove from oven and let cool completely.
  5. Meanwhile, in a saucepan, combine the sugar, cornstarch, flour, egg yolks, milk, and vanilla extract.
  6. Cook the mixture over medium heat, stirring constantly, until it thickens.
  7. Remove from heat, pour it into a bowl, cover with plastic wrap, and refrigerate until cool.
  8. Once the brioche circle has cooled, cut it in half horizontally.
  9. Spread the cooled cream mixture on the bottom half of the brioche.
  10. Top with the whipped cream and then the other half of the brioche, pressing down gently.
  11. Sprinkle the sliced almonds on top and chill for an hour before serving.
