Classic Vanilla Crème Brûlée Recipe

Ingredients:

  • 2 cups heavy cream
  • ½ cup granulated sugar
  • 1 vanilla bean, split lengthwise and scraped
  • 6 egg yolks
  • ¼ cup granulated sugar for the caramelized topping

Instructions:

  1. Preheat oven to 325°F (160°C).
  2. Pour heavy cream into a saucepan and add in the ½ cup of sugar and scraped vanilla bean seeds.
  3. Bring the mixture to a simmer over medium-low heat and remove from heat once it reaches a simmer.
  4. In a mixing bowl, whisk together the egg yolks until they become pale yellow.
  5. Slowly add in the cream mixture to the eggs, whisking as you go. Make sure not to add too much cream at once to avoid cooking the eggs.
  6. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl with a spout.
  7. Divide the mixture evenly into six 6-ounce ramekins or custard cups.
  8. Place the ramekins in a baking dish and fill it with water until it’s halfway up the sides of the ramekins.
  9. Bake for 30-35 minutes or until the edges are set and the center jiggles a bit when shaken.
  10. Remove the ramekins from the water bath and cool them to room temperature.
  11. Cover the ramekins with plastic wrap and chill them in the refrigerator for at least 2 hours or overnight.
  12. When ready to serve, sprinkle some granulated sugar evenly on top of each custard.
  13. Use a kitchen torch to caramelize the sugar until melted and golden-brown.
  14. Let the custards sit for a few minutes to let the caramel harden and serve.
