Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup unsweetened shredded coconut
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

Instructions
- Preheat oven to 350°F. Grease a 9×5 inch loaf pan with coconut oil or cooking spray.
- In a large mixing bowl, whisk together all-purpose flour, whole wheat flour, shredded coconut, baking powder, baking soda, salt and coconut sugar.
- In a separate bowl, whisk together eggs, coconut milk, melted coconut oil, and vanilla extract.
- Add wet ingredients to dry and mix until just combined.
- Pour batter into prepared loaf pan and bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven and let cool for 10 minutes in the pan, then move bread to a wire rack to cool completely.
