Coconut Bread: Healthy Taste

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut sugar
  • 2 large eggs
  • 1 cup unsweetened coconut milk
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pan with coconut oil or cooking spray.
  2. In a large mixing bowl, whisk together all-purpose flour, whole wheat flour, shredded coconut, baking powder, baking soda, salt and coconut sugar.
  3. In a separate bowl, whisk together eggs, coconut milk, melted coconut oil, and vanilla extract.
  4. Add wet ingredients to dry and mix until just combined.
  5. Pour batter into prepared loaf pan and bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
  6. Remove from oven and let cool for 10 minutes in the pan, then move bread to a wire rack to cool completely.
