Coconut Chocolate Christmas Log Recipe

Ingredients:

  • 2 cups of desiccated coconut
  • 400 grams cooking chocolate finely chopped
  • 2/3 cup of sweetened condensed milk
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • Walnuts (optional)

Directions:

  1. Preheat oven to 180°C.
  2. In a baking tray, spread desiccated coconut and bake in the oven for 10-15 minutes or until golden brown. Remove from oven and let it cool.
  3. Chop the cooking chocolate finely and melt it in a double boiler (or in a bowl set over a pan of simmering water).
  4. Add in the sweetened condensed milk, vanilla essence and salt. Mix until well combined.
  5. Incorporate the toasted coconut and mix again.
  6. Place the mixture onto a large sheet of baking paper and shape into a log with the diameter of a regular Christmas cake log. Roll the paper tightly and place in the fridge for several hours or until solid.
  7. Once solid, remove from fridge and cut off one end diagonally. Place the log onto a serving plate and sprinkle chopped walnuts (optional) on top.
  8. Serve cold and enjoy!
