Coconut Chocolate Christmas Log Recipe
Ingredients:
- 2 cups of desiccated coconut
- 400 grams cooking chocolate finely chopped
- 2/3 cup of sweetened condensed milk
- 1 tsp vanilla essence
- 1/4 tsp salt
- Walnuts (optional)
Directions:
- Preheat oven to 180°C.
- In a baking tray, spread desiccated coconut and bake in the oven for 10-15 minutes or until golden brown. Remove from oven and let it cool.
- Chop the cooking chocolate finely and melt it in a double boiler (or in a bowl set over a pan of simmering water).
- Add in the sweetened condensed milk, vanilla essence and salt. Mix until well combined.
- Incorporate the toasted coconut and mix again.
- Place the mixture onto a large sheet of baking paper and shape into a log with the diameter of a regular Christmas cake log. Roll the paper tightly and place in the fridge for several hours or until solid.
- Once solid, remove from fridge and cut off one end diagonally. Place the log onto a serving plate and sprinkle chopped walnuts (optional) on top.
- Serve cold and enjoy!
