Coconut Flan Recipe
Ingredients
- 1 can (14 ounces) unsweetened coconut milk
- 1 can (14 ounces) sweetened condensed milk
- 4 eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Directions
- Preheat oven to 350°F (180°C).
- In a saucepan, heat the coconut milk until it starts to simmer. Remove from heat and let cool.
- In a mixing bowl, whisk together the eggs, sweetened condensed milk, sugar, vanilla, and salt until smooth.
- Add the cooled coconut milk to the egg mixture and whisk until well combined.
- Pour the mixture into a 9-inch round baking dish.
- Place the baking dish into a larger roasting pan. Pour enough hot water to come halfway up the sides of the baking dish.
- Bake for 1 hour or until the flan is set. To check if the flan is done, insert a toothpick into the center. If it comes out clean, it is done.
- Remove from the oven and let cool to room temperature. Once cool, place the flan in the refrigerator to chill for at least 2 hours or overnight.
- When ready to serve, run a knife around the edges to loosen the flan from the dish. Place a serving plate over the top of the dish and flip the flan over onto the plate. Serve chilled and enjoy!
