Coconut Flan Recipe

Ingredients

  • 1 can (14 ounces) unsweetened coconut milk
  • 1 can (14 ounces) sweetened condensed milk
  • 4 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350°F (180°C).
  2. In a saucepan, heat the coconut milk until it starts to simmer. Remove from heat and let cool.
  3. In a mixing bowl, whisk together the eggs, sweetened condensed milk, sugar, vanilla, and salt until smooth.
  4. Add the cooled coconut milk to the egg mixture and whisk until well combined.
  5. Pour the mixture into a 9-inch round baking dish.
  6. Place the baking dish into a larger roasting pan. Pour enough hot water to come halfway up the sides of the baking dish.
  7. Bake for 1 hour or until the flan is set. To check if the flan is done, insert a toothpick into the center. If it comes out clean, it is done.
  8. Remove from the oven and let cool to room temperature. Once cool, place the flan in the refrigerator to chill for at least 2 hours or overnight.
  9. When ready to serve, run a knife around the edges to loosen the flan from the dish. Place a serving plate over the top of the dish and flip the flan over onto the plate. Serve chilled and enjoy!
