Coconut Mousse Recipe

Ingredients:

  • 1 can of full-fat coconut milk (400ml)
  • 1/4 cup of honey
  • 1 tsp vanilla extract
  • 2 egg whites
  • Pinch of salt

Instructions:

  1. Place the can of coconut milk in the fridge overnight.
  2. Open the can and spoon out the thick coconut cream into a mixing bowl. Reserve the leftover coconut water for another use.
  3. Add the honey and vanilla extract to the mixing bowl and whisk together until well combined.
  4. In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form.
  5. Gently fold the egg whites into the coconut mixture until well combined.
  6. Divide the mixture into individual serving dishes and freeze for at least 2 hours.
