Coconut Pineapple Fritters Recipe
Ingredients:
- 1 can (20 oz) crushed pineapple, drained
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup granulated sugar
- 1 cup shredded coconut
- 2 large eggs, lightly beaten
- 1/4 cup milk
- 1 tsp vanilla extract
- Vegetable oil, for frying
- Confectioners’ sugar, for dusting
Directions:
- In a large mixing bowl, combine drained crushed pineapple, flour, cornstarch, baking powder, salt, granulated sugar, and shredded coconut. Mix well until combined.
- Add in lightly beaten eggs, milk, and vanilla extract. Stir until you have a thick batter forms and everything is well combined.
- Heat oil in a frying pan over medium-high heat until it reaches 375°F.
- Once the oil has reached the desired temperature, use an ice cream scoop to drop batter into the oil. Fry each fritter for about 2-3 minutes each side or until golden brown.
- Drain the fritters onto a paper towel-lined plate to absorb any excess oil.
- Serve hot, dusted with confectioners’ sugar.
Verdict:
These coconut pineapple fritters are sweet, crispy on the outside, and tender on the inside. They’re perfect for breakfast or as a dessert. You can serve them alone, but they’d also be great with a scoop of vanilla ice cream.
