Coconut Pineapple Fritters Recipe

Ingredients:

  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • 1 cup shredded coconut
  • 2 large eggs, lightly beaten
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • Vegetable oil, for frying
  • Confectioners’ sugar, for dusting

Directions:

  1. In a large mixing bowl, combine drained crushed pineapple, flour, cornstarch, baking powder, salt, granulated sugar, and shredded coconut. Mix well until combined.
  2. Add in lightly beaten eggs, milk, and vanilla extract. Stir until you have a thick batter forms and everything is well combined.
  3. Heat oil in a frying pan over medium-high heat until it reaches 375°F.
  4. Once the oil has reached the desired temperature, use an ice cream scoop to drop batter into the oil. Fry each fritter for about 2-3 minutes each side or until golden brown.
  5. Drain the fritters onto a paper towel-lined plate to absorb any excess oil.
  6. Serve hot, dusted with confectioners’ sugar.

Verdict:

These coconut pineapple fritters are sweet, crispy on the outside, and tender on the inside. They’re perfect for breakfast or as a dessert. You can serve them alone, but they’d also be great with a scoop of vanilla ice cream.
