Coconut-Raspberry Glazed Tartlets

Ingredients:

  • 1 cup all-purpose flour
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 egg yolk
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup raspberry preserves
  • 1/4 cup powdered sugar
  • 1-2 tbsp water

Instructions:

  1. Preheat the oven to 375°F and grease a mini tartlet pan.
  2. In a medium bowl, mix together the flour, sugar, and salt. Cut in the butter using a pastry blender or two forks until the mixture resembles coarse crumbs.
  3. Add the egg yolk and shredded coconut to the mixture and stir until fully combined.
  4. Press the mixture into the bottom and up the sides of each tartlet mold.
