Coconut-Raspberry Glazed Tartlets
Ingredients:
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1/4 tsp salt
- 1/2 cup butter, softened
- 1 egg yolk
- 1/2 cup unsweetened shredded coconut
- 1/3 cup raspberry preserves
- 1/4 cup powdered sugar
- 1-2 tbsp water
Instructions:
- Preheat the oven to 375°F and grease a mini tartlet pan.
- In a medium bowl, mix together the flour, sugar, and salt. Cut in the butter using a pastry blender or two forks until the mixture resembles coarse crumbs.
- Add the egg yolk and shredded coconut to the mixture and stir until fully combined.
- Press the mixture into the bottom and up the sides of each tartlet mold.
- Bake the tartlets for 10-12 minutes or until lightly golden brown. Remove from oven and allow to cool for 5 minutes before removing them from the pan and transferring them to a wire rack to cool completely.
- In a small saucepan, heat the raspberry preserves on low heat until it becomes liquidy and easy to spread. Spread the raspberry preserves on top of each tartlet, using a spoon or a pastry brush.
- In a small bowl, mix together the powdered sugar and water until it becomes a thin glaze. Drizzle the glaze over the top of each tartlet. Allow the glaze to set before serving.
Verdict:
These coconut-raspberry glazed tartlets are the perfect combination of sweet and tangy. The coconut crust is slightly crunchy and the raspberry preserves add a fruity touch of flavor. The powdered sugar glaze on top adds just the right amount of sweetness to make this dessert irresistible.
Serving suggestions:
Serve the tartlets as a dessert after a romantic dinner with your significant other or as a tea-time snack with your friends. For an added touch, sprinkle some extra shredded coconut on top of each tartlet before serving. Enjoy!
