Coconut Rocks
Ingredients:
- 2 cups shredded sweetened coconut
- 1/2 cup sweetened condensed milk
- 1/4 teaspoon vanilla extract
- 1/4 cup chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined.
- Using a cookie scoop or tablespoon, form the mixture into small balls and place on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until the coconut rocks are lightly golden brown on the outside. Optional: Melt the chocolate chips in a microwave safe bowl and drizzle over the top of the coconut rocks.
