Ingredients

  • 2 large potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1/2 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds cod fillets, cut into bite-sized pieces
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large skillet over medium heat, sauté the potatoes and onion in a tablespoon of olive oil until the potatoes are tender and the onions are translucent. Add the garlic and cook for an additional minute.
  3. Add the diced tomatoes, chicken broth, tomato paste, basil, oregano, salt, and pepper. Bring the mixture to a simmer and cook for 5 minutes.
  4. Add the cod to the skillet and stir until the fish is coated in the tomato sauce.
