Recipe: Cod Fritters
Ingredients:
- 1 pound cod fillets
- 1 small onion, finely chopped
- 1/2 red bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 egg, beaten
- 1/2 cup milk

Instructions:
- Preheat the oven to 250°F. Rinse the cod fillets under cold water and pat dry with paper towels. Cut the fish into small pieces and set aside.
- In a medium mixing bowl, combine the chopped onion, red bell pepper, garlic, parsley, salt, and black pepper. Add the flour and baking powder, and stir until all ingredients are well combined.
- Add the beaten egg and milk to the bowl and mix well. Add the cod pieces and stir until all the fish is coated with the batter.
- In a large non-stick frying pan, heat enough vegetable oil to cover the bottom of the pan to about 350°F. Using a small spoon or cookie scoop, drop spoonfuls of the cod mixture into the hot oil, making sure to leave enough space between each fritter. Fry the fritters, turning once, until they are golden brown and crispy, about 2-3 minutes per side. Remove the fritters from the pan and drain them on paper towels to remove excess oil.
- Keep the fritters warm in the preheated oven until all the batches are cooked. Serve hot with lemon wedges and tartar sauce.
