Ingredients:

  • 1 cup of strong coffee, cooled
  • 1 cup of heavy cream
  • 1 cup of granulated sugar
  • 1 tablespoon of vanilla extract
  • 1/2 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 3 eggs
  • Confectioners’ sugar (optional for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 10×15 inch jelly roll pan or cookie sheet with cooking spray and line with parchment paper.
  3. In a large mixing bowl, beat together the heavy cream, sugar, and vanilla extract until stiff peaks form.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
  5. In another bowl, beat the eggs until light and frothy.
  6. Alternate folding in the flour mixture and beaten eggs into the whipped cream mixture, making sure to mix thoroughly but gently.
  7. Mix in the cooled coffee until just combined.
  8. Pour the batter into the prepared jelly roll pan and smooth out the surface with a spatula.
  9. Bake for 15-20 minutes, or until the cake is golden brown and springs back when touched lightly.
  10. Allow the cake to cool on a wire rack for 10 minutes before removing it from the pan and placing it onto a clean tea towel.
  11. Roll up the cake, starting at one short end, into a spiral and let cool completely.
  12. Once cool, unroll the cake and spread whipped cream or frosting of your choice over the surface.
  13. Roll the cake back up into a spiral and chill for at least 30 minutes.
  14. Dust the top with confectioners’ sugar before serving.
