Cold Tuna Pasta Recipe
Ingredients
- 1lb fusilli pasta
- 2 cans tuna in water, drained and flaked
- 1/2 red onion chopped
- 1/2 cup pitted kalamata olives, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup fresh parsley, chopped
- 3 cloves of garlic, minced
- 1/3 cup extra-virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Directions
- Cook pasta in a large pot of salted boiling water according to package instructions until al dente.
- Drain the pasta and rinse with cold water to stop the cooking process. Drain well and transfer to a large bowl.
- Add the tuna, red onion, olives, cherry tomatoes, cucumber, and parsley to the pasta bowl. Toss everything together until evenly combined.
