Cold Tuna Pasta Recipe

Ingredients

  • 1lb fusilli pasta
  • 2 cans tuna in water, drained and flaked
  • 1/2 red onion chopped
  • 1/2 cup pitted kalamata olives, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 3 cloves of garlic, minced
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Cook pasta in a large pot of salted boiling water according to package instructions until al dente.
  2. Drain the pasta and rinse with cold water to stop the cooking process. Drain well and transfer to a large bowl.
  3. Add the tuna, red onion, olives, cherry tomatoes, cucumber, and parsley to the pasta bowl. Toss everything together until evenly combined.
