Confit Tomatoes with Feta Recipe
Ingredients
- 12-14 small tomatoes
- 2 cloves garlic, finely chopped
- 1/2 cup olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup feta cheese, crumbled
- 2 tbsp chopped fresh basil
Directions
- Preheat the oven to 300°F (150°C).
- Cut the tomatoes in half and remove the seeds.
- Place the tomatoes cut-side up in an ovenproof dish.
- Drizzle the olive oil over the top of the tomatoes.
- Sprinkle the garlic, salt, and black pepper over the top of the tomatoes.
- Cover the dish with foil and bake for 1 hour.
- Remove the foil and continue baking for another 20-30 minutes, or until the tomatoes are soft and slightly caramelized.
- Sprinkle the crumbled feta cheese over the top of the tomatoes and return to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with the chopped fresh basil.
- Serve warm and enjoy!
