Coral Lentil and Kale Soup

Ingredients

  • 1 cup coral lentils, rinsed and drained
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes

  • 1/2 teaspoon coriander
  • Salt and pepper, to taste
  • 2 cups kale, chopped

Directions

  1. In a large pot, sauté the onion and garlic until the onion is translucent.
  2. Add the lentils, vegetable broth, diced tomatoes, cumin, coriander, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes.
  4. Add the chopped kale to the pot and continue to simmer for another 10 minutes.
