Coral Lentil and Kale Soup
Ingredients
- 1 cup coral lentils, rinsed and drained
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1/2 teaspoon coriander
- Salt and pepper, to taste
- 2 cups kale, chopped
Directions
- In a large pot, sauté the onion and garlic until the onion is translucent.
- Add the lentils, vegetable broth, diced tomatoes, cumin, coriander, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes.
- Add the chopped kale to the pot and continue to simmer for another 10 minutes.
