Coriander Lentil Salad Recipe
Ingredients
- 1 cup of dried green or brown lentils
- 1 small red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 bunch of fresh coriander (cilantro), chopped
- 1 lemon, juiced
- 3 tablespoons of olive oil
- Salt and pepper to taste
Instructions
