Coriander Lentil Salad Recipe

Ingredients

  • 1 cup of dried green or brown lentils
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 bunch of fresh coriander (cilantro), chopped
  • 1 lemon, juiced
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions
