Corn Chowder Recipe

Ingredients:

  • 4 cups fresh corn kernels (or canned corn)
  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • Parsley, chopped (optional)

Instructions:

  1. In a large pot over medium heat, cook bacon until it is crispy. Remove the bacon and set it aside, but leave the bacon fat in the pot.
  2. Add onion and garlic to the pot and cook until they are translucent. Add corn and chicken broth and bring the mixture to a boil. Reduce the heat and simmer for about 20 minutes until the corn is tender. Puree half of the soup until smooth using an imersion blender or transfer to a blender, puree, and return to the pot.
  3. Add the heavy cream and cooked bacon into the pot. Stir well and continue to simmer for 10 more minutes, or until everything is heated through. Season with salt and pepper to taste. Serve hot, garnished with chopped parsley if desired.
