Cream-filled Chocolate Eggs Recipe
Ingredients:
- 12 ounces of semi-sweet chocolate chips
- 2/3 cup heavy whipping cream
- 1/3 cup unsalted butter, diced
- 1/2 teaspoon vanilla extract
- 1 tablespoon confectioners’ sugar
- Pinch of salt
- Plastic egg molds (preferably tall)
Directions:
- Melt your chocolate in the microwave or over a double boiler until completely smooth. If microwaving, use 30 second intervals and stir in between to avoid burning the chocolate.
- Using a pastry brush, coat the inside of the plastic egg molds with a thick layer of chocolate. Make sure that the chocolate is evenly distributed, particularly in the corners and at the top. Set aside the remaining melted chocolate to use later.
- Place the molds in the freezer for 10-15 minutes, or until the chocolate is firm and hard to the touch. Remove from the freezer and slowly peel the chocolate eggs out of the molds.
- To make the cream filling, mix the butter, cream, vanilla extract, confectioners’ sugar, and salt together in a small saucepan. Heat over medium-low heat until the mixture begins to simmer, whisking continuously to keep the mixture smooth and free of lumps. Once the mixture has thickened and coats the back of a spoon, remove from the heat and allow it to cool completely before filling the eggs.
- When the filling has cooled, spoon it into each of the chocolate eggs, filling them about 3/4 of the way up. Smooth out the top with a spatula or the back of a spoon. Be careful not to overfill the eggs, as you will need to seal them with more chocolate soon.
- Reheat the remaining chocolate in the microwave or over a double boiler if it has cooled too much to spoon. Once it is warm and runny again, spoon it over the top of each egg to seal the filling inside. Use a spatula or the back of a spoon to smooth the chocolate out so that it is level with the top of the mold. Tap the mold gently on the counter to smooth out any air bubbles that may have formed, then place it back in the freezer until the chocolate has fully set.
- Once the eggs are completely set, remove them from the freezer and gently peel the chocolate away from the mold. Serve them on a platter or in a basket, garnished with fresh berries or chocolate shavings, if desired.
