Cream of Green Asparagus with Vegetables recipe
Ingredients
- 500g green asparagus, trimmed and chopped into small pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 4 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup mixed vegetables (carrots, peas, corn, green beans)
- Fresh parsley, chopped for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add chopped asparagus and minced garlic to the pot. Sauté for about 3-4 minutes or until asparagus is tender.
- Season with salt and pepper to taste.
- Pour in chicken or vegetable broth. Cover and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10-15 minutes.
- Remove from heat and use an immersion blender to puree the mixture until smooth.
- Return pot to stove over low heat and add heavy cream. Stir to combine.
- Add mixed vegetables and continue to cook over low heat until the vegetables are heated through, about 3-4 minutes.
- Taste and adjust seasoning as needed.
- Serve topped with fresh chopped parsley if desired.
