Ingredients

  • 500g green asparagus, trimmed and chopped into small pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup mixed vegetables (carrots, peas, corn, green beans)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add chopped asparagus and minced garlic to the pot. Sauté for about 3-4 minutes or until asparagus is tender.
  3. Season with salt and pepper to taste.
  4. Pour in chicken or vegetable broth. Cover and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10-15 minutes.
  5. Remove from heat and use an immersion blender to puree the mixture until smooth.
  6. Return pot to stove over low heat and add heavy cream. Stir to combine.
  7. Add mixed vegetables and continue to cook over low heat until the vegetables are heated through, about 3-4 minutes.
  8. Taste and adjust seasoning as needed.
  9. Serve topped with fresh chopped parsley if desired.
