Creamy Radish, Cucumber and Raspberry Verrine

Ingredients:

  • 1/2 cup sliced radish
  • 1/2 cup diced cucumber
  • 1/2 cup raspberries
  • 1/4 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp chopped mint
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, mix Greek yogurt, mayonnaise, mint, salt and pepper until well combined. Set aside.
  2. In another bowl, mix sliced radish, diced cucumber and raspberries.
  3. Divide the mixture into 4 verrines (small glasses).
