Ingredients:

  • 1 large onion, thinly sliced
  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 6 large egg yolks
  • 1/4 cup brown sugar

Instructions:

  1. Preheat the oven to 325°F.
  2. Place the sliced onions in a medium-sized saucepan and pour the cream over them.
  3. Bring the cream to a simmer over medium heat, stirring occasionally.
  4. Remove the pan from the heat and let the mixture steep for 15-20 minutes or until the onions have softened and the cream is infused with onion flavor.
  5. In a separate mixing bowl, whisk together the granulated sugar, vanilla extract, and egg yolks until well combined.

  14. Caramelize the sugar with a kitchen torch, broiler, or blow torch until the sugar is melted and golden brown.
  15. Chill the custards for 10-15 more minutes or until the sugar has hardened.
