Creme Brulee with Vanilla Recipe

Ingredients

  • 4 egg yolks
  • 1/3 cup sugar
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • Extra sugar for caramelizing

Instructions

  1. Preheat the oven to 325°F.
  2. In a mixing bowl, whisk together the egg yolks and sugar until the mixture becomes pale and thick.
  3. In a saucepan, heat up the cream and vanilla extract until just before boiling point.
  4. Gradually whisk the hot cream mixture into the egg yolks and sugar mixture until well combined.
  5. Strain the custard mixture through a fine-mesh sieve into a jug or bowl with a pouring spout.
  6. Prepare a baking dish and pour the custard mixture into the dish.
  7. Place the baking dish into a larger baking dish and fill the larger dish with enough water to come up halfway around the sides of the smaller dish.
  8. Bake in the preheated oven for 40-45 minutes or until the custard is just set in the center.
  9. Once cooked, remove the baking dish from the water bath and allow the custard to cool to room temperature.
  10. Cover the custard with plastic wrap, ensuring the wrap is touching the surface of the custard to prevent a skin from forming.
  11. Refrigerate for at least 2 hours before serving.
  12. Sprinkle a generous amount of sugar over the surface of the custard and caramelize the sugar using a kitchen torch or under a broiler.
  13. Allow the sugar to cool and harden before serving.
