Crémets d’Anjou

Ingredients:

  • 500g Fromage blanc
  • 200g Sugar
  • 5 Eggs (separated)
  • 3 Gelatine sheets
  • 1 Lemon (zest and juice)
  • 250ml Whipping cream

Directions:

  1. Soften gelatine in cold water
  2. Mix fromage blanc and sugar together to a smooth consistency
  3. Add the egg yolks and mix well
  4. Add the lemon zest and juice and mix well
  5. Heat the softened gelatine with 2 tablespoons of water in pan until dissolved. Do not boil.
  6. Add to the cheese mixture and mix well
  7. Whip the cream until stiff peaks form. Fold into the cheese mixture gently
  8. Whisk the egg whites and fold into the cheese mixture
  9. Pour the mixture into small dessert glasses or ramekins. Chill it for at least 2 hours or overnight.
  10. Serve with fresh fruits such as berries or sliced peaches
