Crêpes Suzette Log: Christmas Recipe
Ingredients:
- 1 cup flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 tsp salt
- 2 tbsp butter, melted
- 1/4 cup sugar
- 1/4 cup Grand Marnier
- 1/4 cup orange juice
- 1/4 cup butter, cubed
- 1 tbsp orange zest
- 1 tbsp lemon zest
- Powdered sugar, for dusting
Instructions:
- To make the crêpes, whisk together the flour, eggs, milk, water, salt, and melted butter in a medium bowl until smooth.
- Cover and refrigerate the batter for at least 1 hour.
- Heat a non-stick pan or crêpe pan over medium-high heat.
- Brush the pan with melted butter.
- Pour 1/4 cup of the crêpe batter into the pan, swirling the pan to create an even, thin layer.
- Cook for 1-2 minutes, or until the edges start to curl and the bottom is light brown.
- Flip the crêpe using a spatula and cook for another 1-2 minutes on the other side.
- Repeat with the remaining batter, making 10-12 crêpes.
- To make the sauce, combine the sugar, Grand Marnier, and orange juice in a small saucepan.
- Cook over medium heat, stirring constantly, until the sugar has dissolved.
- Add the cubed butter, orange zest, and lemon zest, stirring until the butter has melted and the sauce is smooth.
- To assemble the log, place one crêpe on a platter.
- Spread a small amount of the sauce over the crêpe, then add another crêpe on top.
- Continue layering the crêpes and sauce, ending with a crêpe on top.
- Pour any remaining sauce over the top of the log.
- Cover the log with plastic wrap and refrigerate for at least 1 hour before serving.
- To serve, dust the log with powdered sugar.
