Crêpes Suzette Log: Christmas Recipe

Ingredients:

  1. 1 cup flour
  2. 2 eggs
  3. 1/2 cup milk
  4. 1/2 cup water
  5. 1/4 tsp salt
  6. 2 tbsp butter, melted
  7. 1/4 cup sugar
  8. 1/4 cup Grand Marnier
  9. 1/4 cup orange juice
  10. 1/4 cup butter, cubed
  11. 1 tbsp orange zest
  12. 1 tbsp lemon zest
  13. Powdered sugar, for dusting

Instructions:

  1. To make the crêpes, whisk together the flour, eggs, milk, water, salt, and melted butter in a medium bowl until smooth.
  2. Cover and refrigerate the batter for at least 1 hour.
  3. Heat a non-stick pan or crêpe pan over medium-high heat.
  4. Brush the pan with melted butter.
  5. Pour 1/4 cup of the crêpe batter into the pan, swirling the pan to create an even, thin layer.
  6. Cook for 1-2 minutes, or until the edges start to curl and the bottom is light brown.
  7. Flip the crêpe using a spatula and cook for another 1-2 minutes on the other side.
  8. Repeat with the remaining batter, making 10-12 crêpes.
  9. To make the sauce, combine the sugar, Grand Marnier, and orange juice in a small saucepan.
  10. Cook over medium heat, stirring constantly, until the sugar has dissolved.
  11. Add the cubed butter, orange zest, and lemon zest, stirring until the butter has melted and the sauce is smooth.
  12. To assemble the log, place one crêpe on a platter.
  13. Spread a small amount of the sauce over the crêpe, then add another crêpe on top.
  14. Continue layering the crêpes and sauce, ending with a crêpe on top.
  15. Pour any remaining sauce over the top of the log.
  16. Cover the log with plastic wrap and refrigerate for at least 1 hour before serving.
  17. To serve, dust the log with powdered sugar.

Serve the Crêpes Suzette log as a festive dessert during the holiday season. Accompany with hot chocolate, or whipped cream if desired.
