Crispy Chocolate Tartlets and Crisps
Ingredients:
- 1 ¾ cups all-purpose flour
- ½ cup powdered sugar
- 1/3 cup unsweetened cocoa powder
- 1 ½ sticks cold butter, cut into small pieces
- 2 egg yolks
- 1 tbsp. ice water
- 1 cup dark chocolate chips
- 1 tbsp. vegetable oil
- Coarse sea salt
Directions:
- In a large mixing bowl, combine flour, sugar, and cocoa. Mix well.
- Add butter and use your hands, or a pastry cutter, to combine the ingredients until the mixture becomes crumbly.
- In a separate small bowl, whisk together egg yolks and ice water until combined.
- Pour the egg mixture into the large mixing bowl and stir until a dough has formed.
- Flatten the dough into a disc shape, then wrap in plastic and chill in the refrigerator for at least an hour.
- Preheat the oven to 375°F. Roll the dough out onto a lightly floured surface until it is about 1/8 inch thick.
- Using a cookie cutter or circle-shaped cup, cut small circles out of the dough and place them into a mini tartlet pan. Prick the bottom of each circle a few times with a fork.
- Bake for 15-20 minutes or until golden brown. Allow the tartlets to cool in the pan before removing them.
- In a small microwave-safe bowl, melt the chocolate chips with vegetable oil in 30-second increments, stirring in between each interval.
- Line a baking sheet with parchment paper and spread a thin layer of melted chocolate onto it. Sprinkle the chocolate with coarse sea salt.
- Once the tartlets are cooled, drizzle them with the remaining melted chocolate and sprinkle with coarse sea salt. Serve with the chocolate crisps on the side.
