Crispy Puffed Rice Recipe

Ingredients:

  • 1 cup of uncooked rice
  • 2 cups of water
  • 1/2 tsp of salt
  • oil for frying

Instructions:

  1. Cook the rice in the water with salt in a saucepan for about 12-15 minutes, until almost all the water has been absorbed and the rice is cooked through.
  2. Spread the cooked rice on a sheet pan to cool and dry for about 20-30 minutes.
  3. Heat the oil in a deep frying pan or pot over medium-high heat.
  4. Once the oil is hot, carefully add small handfuls of the puffed rice to the oil. Fry until golden brown and crispy, about 1-2 minutes.
  5. Using a slotted spoon, remove the puffed rice from the oil and place on paper towels to drain off any excess oil.
  6. Repeat with the remaining rice, working in small batches to prevent overcrowding the pan and to ensure even frying.
  7. Once all the rice has been fried, season the crispy puffed rice with salt and spices of your choice, such as paprika, chili powder or garlic powder.
