Crispy Samosas

Ingredients:

  • 1 package of samosa pastry sheets
  • 1 large potato, peeled and diced into small pieces
  • 1 large carrot, peeled and diced into small pieces
  • 1/2 cup frozen peas
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1 tbsp vegetable oil
  • Salt to taste
  • Oil for deep frying

Instructions:

  1. Heat oil in a pan. Add cumin seeds and let them crackle.
  2. Add minced garlic and chopped onions. Sauté till onions turn translucent.
  3. Add diced potatoes and carrots. Stir well.
  4. Add frozen peas and all the spices – coriander powder, turmeric, red chili powder, garam masala, and salt. Mix everything properly. Cover the pan with a lid and let it cook for 10-15 minutes or until the veggies are soft and tender.
  5. Open the lid and mash the vegetable mixture slightly. Let it cook for a few more minutes till any left-over moisture evaporates. The potato and carrot should be soft but not mushy.
  6. Remove the mixture from heat and let it cool down.
  7. Take samosa pastry sheets and cut them into two rectangular sheets.
  8. Make a slurry by mixing 1-2 tablespoon of flour in 1/2 cup of water.
  9. Take one rectangular samosa sheet and fold it into a cone shape. Seal the edges with the help of slurry.
  10. Fill the cone with 1-2 tablespoon of vegetable mixture.
  11. Apply slurry on the edges of the cone and seal it tightly.
  12. Repeat the process for all the samosas.
  13. Heat oil in a deep pan.
  14. Deep fry the samosas till it turns golden brown and crispy. Remove from the oil and drain the excess oil with the help of a paper towel.
  15. Crispy and delicious samosas are ready to serve!
