Crispy Samosas
Ingredients:
- 1 package of samosa pastry sheets
- 1 large potato, peeled and diced into small pieces
- 1 large carrot, peeled and diced into small pieces
- 1/2 cup frozen peas
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp turmeric
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 1 tbsp vegetable oil
- Salt to taste
- Oil for deep frying
Instructions:
- Heat oil in a pan. Add cumin seeds and let them crackle.
- Add minced garlic and chopped onions. Sauté till onions turn translucent.
- Add diced potatoes and carrots. Stir well.
- Add frozen peas and all the spices – coriander powder, turmeric, red chili powder, garam masala, and salt. Mix everything properly. Cover the pan with a lid and let it cook for 10-15 minutes or until the veggies are soft and tender.
- Open the lid and mash the vegetable mixture slightly. Let it cook for a few more minutes till any left-over moisture evaporates. The potato and carrot should be soft but not mushy.
- Remove the mixture from heat and let it cool down.
- Take samosa pastry sheets and cut them into two rectangular sheets.
- Make a slurry by mixing 1-2 tablespoon of flour in 1/2 cup of water.
- Take one rectangular samosa sheet and fold it into a cone shape. Seal the edges with the help of slurry.
- Fill the cone with 1-2 tablespoon of vegetable mixture.
- Apply slurry on the edges of the cone and seal it tightly.
- Repeat the process for all the samosas.
- Heat oil in a deep pan.
- Deep fry the samosas till it turns golden brown and crispy. Remove from the oil and drain the excess oil with the help of a paper towel.
- Crispy and delicious samosas are ready to serve!
